Here are a few easy high protein vegan recipes to get started:

Vegan Parmesan Cheese

Ingredients for 4 servings

  • 1 cup of raw cashews
  • ½ cup nutritional yeast
  • ½ teaspoon salt
  • ½ teaspoon garlic powder

Directions and Total Time: 5 minutes

In a blender on pulse setting, pour in the cashew nuts, nutritional yeast, salt and garlic powder. Process the ingredients until smooth. Pour the mixture into an airtight container and use it as the recipe desires.

Vegan Cashew Cheese

Ingredients for 4 servings

  • 1 cup raw cashew nuts
  • 2 tbsp freshly squeezed lemon juice
  • 2 tablespoons nutritional yeast
  • ¼ teaspoon garlic powder
  • Salt and black pepper to taste
  • ¼ cup water or as needed

Directions and Total Time: 10 minutes

In a blender on pulse setting, process the cashew nuts, lemon juice, nutritional yeast, garlic powder, salt, black pepper, and water until smooth. Adjust the taste with more lemon juice, salt, and black pepper as desired and blend again. Pour the mixture into an airtight container and use it as the recipe desires.

Vegan Mayonnaise

Ingredients for 4 servings

  • 1 cup of soft tofu
  • 1 teaspoon freshly squeezed lemon juice
  • 1 teaspoon distilled white vinegar
  • 2 teaspoons nutritional yeast
  • 1 teaspoon Dijon mustard
  • 1 teaspoon pure maple syrup
  • ½ cup of vegetable oil

Directions and Total Time: 5 minutes

In a blender on low speed, process tofu, lemon juice, white vinegar, nutritional yeast, Dijon mustard, salt, and maple syrup until blended. Add vegetable oil and blend until oil and mixture are emulsified after one minute.
